The TropiCafé story combines culinary expertise with pure hard work. Moni brings over 15 years of professional culinary experience as an catering chef. She manages menu creation and flavor development, making sure every drink delivers a balanced taste experience.
Ray provides the operational strength behind our trailer. Armed with dedication and self-taught skills, Ray transformed an empty unit into a custom mobile espresso bar. Together, their combined talents created one of East Austin’s most welcoming local spots.
Originally, Ray planned to expand their existing catering company with a Puerto Rican sandwich truckâa way to share the flavors and recipes of the island with Central Texas. Then, a Valentineâs Day gift changed everything.
Ray gave Moni an espresso machine, and what started as a love for coffee and cute, creative drinks quickly became something more. Moni began experimenting at home, making tropical syrups from scratch and pairing espresso with familiar island flavors like guava and coconut.
Then came the Guava Pie Latte.
What started as one of Moniâs experiments quickly became a favorite among friends and family. The response sparked an idea: why not create a coffee experience that felt just as vibrant, nostalgic, and welcoming as the flavors they grew up loving?
Thatâs when the vision shifted.
Instead of simply bringing another food truck to Austin, Ray and Moni set out to create a tropical coffee truck rooted in island flavor, creativity, and a little bit of homeâone cup at a time.
