Ray provides the operational strength behind our trailer. Armed with dedication and self-taught skills, Ray transformed an empty unit into a custom mobile espresso bar. Together, their combined talents created one of East Austin’s most welcoming local spots.
Our business started with a very different concept. Ray originally planned to launch a Puerto Rican sandwich food truck to share authentic island recipes with Central Texas. A thoughtful Valentine’s Day gift changed our path completely.
When Ray gave Moni an espresso machine, her chef background took over. She began testing house-made tropical syrups, combining espresso with classic island ingredients like guava and coconut. After her original Guava Latte recipe took off, the direction became clear: Austin needed a dedicated tropical coffee truck.
